​savoury chicken

ingredients:

  • olive oil (enough to coat pan)
  • about ½ of a white onion
  • 2 cloves of garlic
  • spices, as desired. (I used garam masala, sea salt, and ground black pepper)
  • 1 medium-large chicken breast (cut into thin strips)
  • about ½ of a green pepper
  • about 1 Tbsp of coconut milk
  • optional: cashews

process:

  • turn on stove burner to medium heat
  • let pan get a bit warm
  • coat pan with oil and let heat
  • add garlic and onion, sauté
  • when garlic and onion are browning, add chicken and spices (garam masala, sea salt, ground black pepper)
  • when chicken mostly cooked, add green pepper
  • when pepper is slightly softened, add coconut milk and stir
  • mix well and let warm
  • serve soon after with flatbread, on rice, or with quinoa
