dark chocolate chunk cookies

ingredients:

  •  2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened (we used 2 cubes, [1/4 lb each], the same as 2 sticks in the US, and here are other equivalencies) 
  • 1 1/2 cups sugar(s) of your choice (for us, at least 1 cup of that is coconut sugar)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 package (200g - 312g) of chocolate chunks or chocolate chips (we use 50% - 70% dark chocolate varieties)
  • optional - 1 cup chopped nuts

process:

  • preheat oven to 375° F
  • combine flour, baking soda, and salt in a small bowl
  • beat butter, sugar(s), and vanilla in a large mixer bowl, until creamy
  • add eggs, one at a time, beating well after each addition
  • gradually beat in flour mixture
  • stir in chips or chunks (and nuts)
  • drop by rounded teaspoons (or tablespoons) onto ungreased baking sheets
  • bake for 9-11 minutes, or until golden brown
  • cool on baking sheets for 2 minutes
  • remove to wire racks to cool completely
  • yields about 60 cookies, according to the original recipe - but, for us it has made 40-47 cookies, depending upon cookie size, and also whether chocolate chips or chocolate chunks were used (the chocolate chunk package was smaller)
