Rice Flour Cake With Chocolate Frosting

Rice Flour Cake - Ingredients:

• 4 eggs
• 1/2 cup maple syrup
• 1/2 tsp baking soda
• 2 2/3 cup rice flour
• 1 1/2 tsp cream of tartar
• 1/4 cup light-tasting olive oil

Rice Flour Cake - Process:

• Mix all ingredients together.
• Spread evenly in a 9" x 9" ungreased pan.
• Bake at 350° F for 9 minutes.
• Once cake comes out of oven, begin making the icing.

Chocolate Frosting - Ingredients:

• 4 oz. unsweetened Bakers chocolate
• 1/2 cup maple syrup
• 1 tsp ground chia seeds

---

Chocolate Frosting - Process:

• Melt chocolate and maple syrup together in a double boiler.
• Once liquid, add in chia seeds and mix.
• When mixture thickens, spread over cake.
• Put in fridge until chocolate is firm.
• Enjoy!
